  • 1 English cucumber, thinly sliced
  • 8-10 radishes, trimmed and thinly sliced
  • 1/2 cup chopped fresh dill or chives (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and freshly ground black pepper to taste
  • Optional additions: crumbled feta cheese, sunflower seeds, chopped red onion, fresh mint


  1. Wash and dry the cucumber and radishes. Thinly slice both vegetables using a sharp knife or mandoline. You can leave the cucumber skin on for added texture and nutrients.
  2. Combine the sliced cucumber and radishes. Add the chopped dill or chives if using.
