How to make pomegranate arugula salad?

Here’s how to make a delicious pomegranate arugula salad:

  • 5 ounces baby arugula
  • 1/2 cup pomegranate arils (seeds)
  • 1/4 cup walnuts or pecans, toasted and chopped
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup red onion, thinly sliced (optional)
  • For the dressing:
    • 2 tablespoons olive oil
    • 1 tablespoon lemon juice
    • 1 teaspoon honey or Dijon mustard
    • Salt and freshly ground black pepper to taste

  1. Wash and dry the arugula. Arrange it in a serving bowl.
  2. Scatter the pomegranate arils, toasted nuts, and feta cheese (if using) over the arugula.
  3. In a small bowl, whisk together the olive oil, lemon juice, honey/Dijon mustard, salt, and pepper. Drizzle the dressing over the salad.
  4. Toss the salad gently to combine all the ingredients.
  5. Add the red onion (if using) just before serving.

Although this salad is best served fresh, you can store any leftovers in an airtight container in the refrigerator for up to a day.
