  • 2 navel oranges, peeled and segmented
  • 1 cup mixed greens (arugula, spinach, romaine)
  • 1/2 cup walnuts, toasted and chopped
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh orange juice
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper to taste


  1. Peel the oranges and remove any white membrane. Use a sharp knife to cut between the membranes and the flesh to release the orange segments. Discard the membranes.
