Here is how to make Chicken and Berry Salad:

  • Boneless, skinless chicken breast (about 4-6 oz)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 4 cups mixed greens (spinach, romaine, or baby kale work well)
  • 1 cup fresh berries (strawberries, blueberries, raspberries, blackberries, or a mix)
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese or goat cheese
  • 1/4 cup chopped pecans or walnuts
  • 2 tablespoons olive oil

  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper to taste

  • Season the chicken breast with salt and pepper.
  • Heat the olive oil in a pan over medium heat and cook the chicken until golden brown on both sides and cooked through (internal temperature reaches 165°F).
  • Let the chicken cool slightly, then shred or dice it into bite-sized pieces.
  • In a large bowl, combine the mixed greens, berries, red onion, and chicken.
  • In a small jar or bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper to make the vinaigrette.
  • Drizzle the vinaigrette over the salad and toss to coat. Top with the feta cheese and pecans (if using) and serve immediately.

You can use leftover grilled or roasted chicken for this recipe or even add other ingredients to the salad, such as diced avocado, cucumber, or celery.
