  • Ripe avocado (1-2)
  • Fresh corn kernels (cooked or canned, about 2 cups)
  • Cherry tomatoes (about 1 cup, halved)
  • Red onion (1/4 cup, finely chopped)
  • Cilantro (1/4 cup, chopped)
  • Lime juice (2-3 tablespoons)
  • Olive oil (2-3 tablespoons)
  • Salt and pepper to taste


  • Dice the avocado into bite-sized pieces. Drizzle with lime juice to prevent browning.
  •  If using fresh corn, cook it by boiling, grilling, or roasting until tender. If using canned corn, drain and rinse.
